Numbing vs. Spicy: The Two Halves of Málà
Málà (麻辣) means “numbing-spicy.” The two sensations come from different ingredients:
- Má (numbing) comes from Sichuan peppercorns: a tingling, buzzing sensation on the lips
- Là (spicy) comes from dried chilies and chili oil: the burning warmth most people picture
The numbing tingle softens the chili burn, which is why authentic Szechuan food tastes intense and balanced instead of painful.
How Hot Is It, Really?
On its own, Szechuan heat ranges from gentle warmth to a sweat-on-the-brow burn. The tingle stays with you longer than the fire. Cooks add heat at the wok through chili oil and dried chilies, which makes it one of the most adjustable cuisines you can order. The chili is a dial. The peppercorn tingle is the signature.

Which Dishes Are Spicy and Which Are Mild?
Spicy (málà) dishes:

- Dan dan noodles
- Kung pao chicken (authentic) and twice-cooked pork
Mild, not-spicy dishes:
- Lo mein, beef with broccoli, moo goo gai pan
- Sweet and sour chicken, shrimp with cashew nuts
- Hot and sour soup: tangy and peppery, but not chili-hot
Tips for Handling the Heat
- Steamed rice tempers heat better than water. Water spreads the chili oil around
- The peppercorn tingle fades in a minute or two. Pace yourself and it settles
- Order a mild dish alongside a spicy one to balance the table
