Dan dan noodles (dàndàn miàn, 担担面) are a Sichuan street dish: wheat noodles under a spicy, nutty chili-and-sesame sauce, topped with savory ground pork and preserved vegetables. The name comes from the dàn, the carrying pole vendors once used to balance the noodles and sauce through the streets of Chengdu.
