Dan dan noodles (dàndàn miàn, 担担面) are a Sichuan street dish: wheat noodles under a spicy, nutty chili-and-sesame sauce, topped with savory ground pork and preserved vegetables. The name comes from the dàn, the carrying pole vendors once used to balance the noodles and sauce through the streets of Chengdu.

What's in Dan Dan Noodles?

  • Wheat noodles: thin and springy, the base of the dish
  • Chili oil: provides heat (là) and the red sheen
  • Sichuan peppercorns: ground for the numbing (má) tingle
  • Sesame paste or tahini: the nutty, creamy backbone of the sauce
  • Ya cai: Yibin preserved mustard greens that add a salty, fermented depth
  • Ground pork: fried crisp and seasoned, scattered on top
  • Soy, Chinkiang vinegar, scallion, garlic: round out the sauce

What Do Dan Dan Noodles Taste Like?

The flavor is málà: numbing and spicy at once, layered over a rich sesame base. You get heat from the chili oil, a buzzing tingle from the Sichuan peppercorns, savory umami from the pork and preserved greens, and a faint sour-sweet edge from the vinegar. Dry vs. Soupy Dan Dan Noodles

Authentic Chengdu dan dan noodles are nearly dry: a small pool of intense sauce at the bottom of the bowl that you toss through the noodles before eating. Many American versions add broth to make a soupier bowl. Both exist. The dry style is the original, and it keeps the sauce concentrated.
