What Are Pan Fried Dumplings?

Pan fried dumplings—called guōtiē(锅贴) in Mandarin, literally “pot stickers”—are wheat-dough dumplings filled with seasoned pork and vegetables, then cooked using a technique that combines pan-frying and steaming. The bottom gets seared golden-brown and crispy in a hot, oiled pan. Then water is added and the pan is covered, steaming the top until the dough turns soft and translucent. The result: two textures in one bite.

The History: From Northern China to Every Menu in America

Pan fried dumplings originated in northern China, where wheat—not rice—is the staple grain. Legend says they were invented by a cook who accidentally left boiled dumplings in a dry pan, discovering that the crispy bottom made them better. True or not, the technique spread across China and eventually to every Chinatown in the United States.

In the D.C.–Maryland corridor, guotie became a fixture on Chinese restaurant menus by the 1980s. Today they're as expected as egg rolls and wonton soup. When made well, they're more interesting.
