What to Order at China Jade: Our Most-Loved Dishes

Our regulars order the same dishes every visit. Here are the ones worth knowing about, from Mapo Tofu to Twice-Cooked Pork, with notes on what makes each worth ordering.
China Jade runs over 100 dishes spanning Szechuan, Cantonese, and American-Chinese cooking. Our regulars return for the same handful, visit after visit.
Top Szechuan Classics
Mapo Tofu (麻婆豆腐)
Our most-ordered dish. Silky tofu simmered in fermented black bean, doubanjiang, and ground pork, finished with Sichuan peppercorns for the numbing heat. Most restaurants skip the peppercorns. Ours are imported from China.
Kung Pao Chicken (宫保鸡丁)
Diced chicken stir-fried with peanuts, dried chilies, and Sichuan peppercorns. The sauce is sweet-tangy with real heat from the peppercorns. We use the classic Sichuan recipe.
Dan Dan Noodles (担担面)
Wheat noodles topped with sesame-chili sauce, ground pork, and ya cai (Yibin preserved vegetables). The sauce is nutty and vinegary with a spicy finish. Regulars order this every visit.
Crowd Favorites
- Hot and Sour Soup — Vinegary broth with wood-ear mushrooms, tofu, bamboo shoots, and egg ribbons. Our most-ordered soup.
- General Tso's Chicken — Crispy fried chicken in a sweet-spicy glaze. The dish most non-regulars start with.
- Beef with Broccoli — Sliced beef and broccoli in oyster sauce. Good for the table when you have picky eaters.
- Shrimp with Lobster Sauce — Jumbo shrimp in an egg-and-pork sauce. One of our longest-standing regular orders.
Must-Try House Specialties
Order a whole Peking Duck ahead of time for the table. Twice-Cooked Pork (回锅肉) is also worth ordering: pork belly cooked twice, with leeks and fermented bean paste, one of the harder Sichuan dishes to find well-made in the D.C. area.
Best Value: Lunch Specials
Monday through Friday, 11 AM–3 PM, 30+ dishes are on the lunch specials menu: entrée, fried rice, egg roll, and soup for under $12. Good for sampling different dishes without ordering full dinner portions.
